Instructions

Put beet ingredients into a deep pan, cover with foil and place in an oven at 375 for 1-1.5 hours depending on size of beets. Check for doneness by piercing with a knife. Peel and allow to cool. Once cool, slice into thick batons.

Place all ingredients for whipped goat cheese in a food processor and blend until smooth and spreadable.

Plate by spreading goat cheese on a plate, top with beet batons and blood orange segments, walnuts, fresh herbs, and a drizzle of olive oil. Serve with a glass of Bonterra’s pinot noir made with organic grapes. Enjoy!
